Carrot Salad
Options:
1/4 C chopped raw nuts (almonds, walnuts, pecans, etc)

1 Tablespoon frozen orange juice or apple juice concentrate in place of pineapple juice


3 grated raw carrots
1/2 C crushed pineapple
1/4-1/2 Cup chopped dates
1 Tablespoon frozen pineapple juice concentrate

Stir together all these ingrediants and serve on a bed of lettuce leaves.

Serves 2-4 people.
